Rice soup
Rice Soup is a delicious appetiser recipe that can be enjoyed in any season. This Thai recipe is prepared with rice, coconut milk, spring onions, starch and a melange of spices and tastes amazing. You can add your choice of vegetables to increase the flavour of this soup. A must try for occasions like buffet, kitty party and pot luck, this dish would be loved by all!
Ingredients
(For 2 persons)
- 2 cup starch
- 2 tablespoon refined oil
- 3/2 teaspoon onion
- 1 tablespoon broccoli
- salt as required
- 1 tablespoon coconut milk
- 1 teaspoon coriander leaves
- 1 tablespoon baby corn
- 1 tablespoon carrot
Step1
To start with, take a chopping board and chop onion, carrot, spring onions, baby corn and broccoli on it. In a deep-bottomed pan kept on medium flame, heat oil and saute the chopped onions in it until translucent.
Step2
To these onions, add all the ingredients except for coconut milk, boiled rice and spring onions. Let the mixture boil then reduce the flame to low and simmer for 6-7 minutes.
Step3
Remove from flame and stir in coconut milk. Serve hot without reheating the soup by garnishing with boiled rice and chopped spring onions.
